How long do roasted coffee beans last?

The Direct answer (although complex): Lasts approximately 6-8 weeks in sealed bag, but peak flavor usually within 2-3 weeks. 


Roasted coffee beans can have a stable flavor for about 1-3 weeks after being roasted. Although roasted coffee beans are shelf-stable, the downside to having them sit without  proper temperature or package sealing methods is they lose flavor. If the package is unopened and sealed they can last longer, however it is important to understand that if the OEM packaging has the vent (the vent in coffee packages is to prevent pressure build up inside the package due to the gases from the beans) that can prolong and allow less oxygen into the package (oxidation), but it only can extend the time by about 3-4 weeks. 
 
Key factors for storing beans for the best freshness (flavor) and preventing staleness is to store them in air-tight containers or vacuum-sealed bags, in a cool, dry, dark and away from moisture location. 
It is often believed that storing coffee beans in the refrigerator is a safe place for the beans, however it often is misleading as in that environment there are frequent temperature swings and moisture which can lead to loss of aroma and freshness (Flavor). It is best to store in an environment away from dishwashers or ovens as they can create moisture and of course sunlight as well. Store in such places like in the top back of a cupboard or pantry. 

Understand that the coffee bean does not usually become unsafe like milk or cheese, rather it goes stale and loses aroma, sweetness and most certainly complexity which is the embodiment of the bean itself. The question really becomes, "does it still taste great" as apposed to "how long does it last".

Peak freshness (flavor) is between weeks 1-2 after roasting because it allows the beans to degas, then declines gradually beyond that. Keep that in mind when you buy coffee at a big box store or market, because it can be weeks before the package of coffee hits the shelf due to all the processes involved in getting them there, which leads to degassing and flavor decline prior to you taking it home.

How to test the freshness of your coffee beans:
